Greek style lamb chops

4 servings, prep 10mins, cook 10mins (plus marinating)

  • 8 lamb loin chops

  • 60ml olive oil

  • 2 gloves garlic minced

  • 1tbs dried oregano

  • 1tsp dried thyme

  • Juice 1 lemon

  • Pepper to taste

 

  1. In a small bowl place all ingredients except the chops, mix well

  2. Place the chops into a shallow bowl or resealable plastic bag, pour over the marinade turning the lamb chops over in it to coat thoroughly, cover or seal an marinate in fridge for at least 2 hours, overnight is best

  3. Preheat grill to medium high heat

  4. Remove chops from marinade and discard excess

  5. Grill chops for 3-4 mins each side or until desired doneness is reached

  6. Transfer the chops to a plate and allow to stand for 5mins to rest

  7. Serve hot with your accompaniments of choice

Balsamic glazed pork chops

4 servings, Prep 10mins, Cook 20mins

  • 4 boneless porkchops

  • 60ml balsamic vinegar

  • 2tbs honey

  • 2cloved garlic minced

  • 1tsp dried rosemary

  • Pepper to taste

  • A little oil for greasing

 

  1. In a small bowl whisk together balsamic vinegar, honey minced garlic rosemary and grind of pepper

  2. Preheat grill over a medium-high heat, grease rack with a little oil

  3. Place the pork chops on the grill and cook for approx. 6-8 mins a side, basting the glaze all over the chops as you go

  4. Remove from grill and let rest for 5mins

  5. Serve hot with accompaniments of choice

Herb grilled marinated steak

4 servings, prep 15mins, cook 10mins (plus marinating)

  • 500g thin cut steak

  • 2tbs olive oil

  • 2cloves garlic minced

  • 2 tbs dried mixed herbs

  • 1tbs balsamic vinegar

  • Pepper to taste

 

  1. In a small bowl mix together all ingredients except the steak, combine well to make the marinade

  2. Put steak in a shallow bowl or a resealable plastic bag, pour over marinade ensuring steak is well coated on all sides, cover or seal ang marinate in fridge for 2hours, overnight is best

  3. Preheat grill to medium-high heat

  4. Grill steak for 3-4mins a side until cooked to your liking

  5. Transfer to a cutting board and leave to rest for 5mins

  6. Slice steak thinly against the grain and serve hot with accompaniments of choice

Italian herbed pork tenderloin

4 servings, Prep 10mins, cook 25mins

  • 500g pork tenderloin

  • 1tbs olive oil

  • 1 cloves garlic minced

  • 1 tbs mixed dried herbs

  • Pepper to taste

 

  1. Preheat oven 200oC Gas 7 and line a baking tin with parchment paper

  2. In a small bowl combine the herbs olive oil garlic and grind of pepper

  3. Pat the pork dry and place on baking tray

  4. Rub the herb oil all over the joint

  5. Roast in the oven for 20-25mins until cooked through

  6. Remove and allow to rest before slicing

  7. Serve hot with accompaniments of choice
